The color might throw you off a little bit, but Sorabol’s seolleongtang is pretty darn tasty. It’s basically beef broth made from ox bones, and then simmered over low flames for a long time — we’re talking hours here. Hence, the white, milky color that offers up a rich flavor. Expect noodles, green onion, pieces of beef and gelatinous tendon for varying textures in each bite. Protip: Add kkakdugi (a type of daikon kimchi) to the soup and stir well for a nice pink color and added flavor. Protip No. 2: Add in rice to the creamy soup to finish it off.
